Hi,
I believe the symbol and reference used for the hiking relation come from the book Rother Wanderführer, Neuseeland. As these are not 'on the ground' I don't think they should not be used in OSM.It would be like using an English travel guide to detail Berlin with their notes.

osmc:symbol is for rendering purposes:

This symbol must not be equal with physical markings on path. For that is tag symbol.
So I can't understand why it bothers you.
There are thousands of hiking routes around world which have no markings on ground. It doesn't mean that we cant' map them for hikers to follow. -

If I see a symbol on the map I expect to see the same symbol on the trail.

Why you deleted ascent and descent tags? I have written permission from publisher to use Rother Wanderführer data on OSM

a) How am I supposed to know that from this changset comments/source or the tags on the relation? I am not a mind reader.
b) Where in OSM is the permission shown?
I have looked on https://wiki.openstreetmap.org/wiki/Contributors and on https://wiki.openstreetmap.org/wiki/Import/Catalogue. -

Take a look at https://hiking.waymarkedtrails.org/#route?id=6215093 click on the elevation profile .. that shows
Accumulated ascent: 695 m
Accumulated descent: 700 mThere will be some errors in there .. but might be better data than that book.

There are 2 main issues raised here that are applicable to other change sets of yours.
Issue 1. Copyright.
A) The change set source does not state the guide book you are apparently using. And it is now too late to include it there. None of the features that apparently use the guide book have any source statements linking to the guide book.
B) There does not appear within OSM to be a documented valid copyright acceptance of use within OSM.Corrective actions need to be made. I would think that first any copyright agreement needs to be documented in OSM. Secondly source tags need to be included with every feature to state where the information came from.
Issue 2. Tag Use.
A number of tag appear to be misused to link to a particular guide book. So far as found in New Zealand these are the ref, description and osmc:symbol tags.Corrective actions also need to be made with the removal of these tags. If you feel the need to link to the guidebook then it needs to be done is some appropriate way. For example guidebook:publisher=title, section. What ever tag you decide on using, ensure it is compatible with any OSM existing documentation, if there is no OSM existing documentation then document it.
Note: these are my personal thoughts on the matter … others may have different views!

the Data Working Group became aware of this discussion. You say in comment #4 that you "have written permission from publisher to use Rother Wanderführer data on OSM.". This would be great news.However, could you please _submit a copy of this permission_ to the Data Working Group, at <data@osmfoundation.org>, so we can check if it is compliant with OSM's license model.
Whether to map such routes in OSM can than be discussed separately.
