Pedestrian routing works well without those extra footways: https://www.openstreetmap.org/directions?engine=graphhopper_foot&route=56.18349%2C10.19835%3B56.18408%2C10.20669

They work well with graphhopper I see. This seems to be due to a disregard for one direction bike paths (even if you choose routing with bikes). OSRM does not seem to ignore this. I am very open to alternate suggestions on the proper way to address the issue of a pedestrian path branching of from from the main road.

As far as I can see graphhopper works correctly for bicycles too: https://www.openstreetmap.org/directions?engine=graphhopper_bicycle&route=56.18281%2C10.19789%3B56.18434%2C10.20275

Note that in Denmark both examples are the correct behaviour

Yes, I caught that one as well after closer investigation. (I messed up origin and destination.) I using bike paths against the designated direction for pedestrians expected behavior?

Yes

Note that walking against the designated direction is usually safer.

Excellent. Forgive my newbie mistakes. Should I/we roll back changes and perhaps focus on the shortcuts that are actually missing?

Comment from Hjart
Which is also why pedestrians on roads without sidewalks should always walk on the left side.

You are welcome to roll back if you know how.

I am well aware of the real world traffic safety etc. Just not aware of the standard interpretation in OSM. :)
