Hi,
there is no need to translate tags like "tourism:fr = chambres d'hôte" - The translation is the same for all tourism = guest_house tags world-wide and can be done automatically by the software showing the data.Jan

Thank you for your comment. I'll remove the unnecessary tag.
However, I'll carry on tagging specifically bakers' shops in France as
shop:fr = boulanger, patissier
or
shop:fr = pain, patissier
according to whether the shop displays "Boulanger" or "Pain". This is because
of the legal distinction in France between a boulanger and a dépôt de pain. See

Sure, if it provides additional information, an additional tag makes sense.
As you describe a sub-group of bakeries, I would opt for a tagging like this:
shop = bakery
bakery = boulanger -

OK. Actually I'll find out if the French User Group have a recommended practice on tagging for bakeries. If not, I'll put forward the method

mueschel advice is good. Prevent using multiple keys as long as possible.
So if needed; I would add:
produced_on_site = yes/no
craft=backery.
pastry=yes...
