Since 1986, the acute accent on e (é) is no longer obligatory in any words in Danish: https://books.google.dk/books?id=QHMGCAAAQBAJ&pg=PA678&lpg=PA678#v=onepage&q&f=false

Understood, DK7080BE, but then the usage is inconsistent, as you can see from "Borups Allé" in OSM. Since both are correct and accepted forms, shouldn't we give preference to the canonical way of writing?

Yes, I agree that the use of "é" is inconsistent in Denmark. I think we should map what's on the traffic signs or in the address points next to the road. The other spelling can be specified in "alt_name ="

I think what's on our imported addresses (please do not touch those btw) is generally the official spelling.
Note that streetsigns isn't always correct. -
