The Bing imagery looks different than the other imagery. Are the footprints still the same?
Also I believe you need to add `building=part` to the individual lines that make up the greater building relation. https://wiki.openstreetmap.org/wiki/Key:building:part

You're right; it doesn't really make sense to keep the existing lines since when you go inside, you see that it is all one contiguous space. They did some major renovations, knocking down walls to the point where the old smaller building footprints don't exist anymore. This entire building needs to be resurveyed for it to be accurate on OpenStreetMap.
Would a fixme tag be appropriate here?

It looks like the new footprint (from the Bing Imagery) is the same as the outermost footprint. I think the grass/plant areas may be on the roof which makes it a little confusing. You could combine all the parts to make one building. A fixme tag is fine if you'd like to leave a note on the situation.
If you want to tag the gym layout inside there are some indoor mapping tags, I'm not too familiar with them. Entrances/exits may be helpful too.
